This is one cooking hack that helps me all the time. If you like to buy your food in bulk like I do, this would be absolutely perfect for you!
most times, when I buy a whole bunch of plantain (unripe preferably), because it’s cheaper, I just drop it in the store to ripen naturally one by one.
But the issue for us all, is that the plantains can ripen all at once! what that means, is that you’ll have to urgently fry it or look for recipes to make with it, while it’s still fresh and yellow…before it turns bad.
Anyway, with this hack i’ll be showing you shortly, you have no problem at all!
Enough of the long talk, let’s get down to business with this first step.
As you’ve seen, the first thing to do is to get some firm ripe plantain. Now, cut into any shape/size that you desire.
When you are done cutting, sprinkle some salt on it (optional) and arrange first on a flat surface sheet, then put in the freezer for few hours to freeze first.
Dodo is favorite snack of all time. I hear some people don’t like it at all, as a matter of fact, they don’t even like anything plantain!
But how? How can anyone not like plantain? It’s so versatile!
You can use it for chips, you can make porridge with it, and for many other delicious uses.
Basically, you can fry it, grill it, boil it and even make a frittata out of it…now, that’s my all time favorite!
Plantain Frittata is a Nigerian Version of Pizza. it’s a one pan dish that is made with fried Dodo, Egg and assorted vegetables.

The next thing is to gently pour into a Ziploc bag, or any plastic wrap that you have. After that, you can drop in a freezer for as long as you want.
If you are staying abroad, you should definitely use this hack for preservation because I heard it’s not so easy to get plantain quickly over there.
Freezing foods is one of the easiest forms of food preservation. Some food also last longer in the freezer than the other. But when you package the food item properly, you achieve the optimal freshness that you need.
When it’s time to fry, simply heat up your oil, drop it inside the hot oil one after the other.
No! You don’t have to allow it defrost. If you want it to come out as fresh and firm as before, it’s better to fry while it’s frozen.
It might take a little time for the oil to absorb the coolness. but don’t worry! it will adjust to the hotness and fry beautifully.
